Ingredients

  1. Dough
  2. 5 1/4 cupsall-purpose flour (about 650 grams)
  3. 1 pinchsalt
  4. 3 tablespoonsoil
  5. 2 tablespoonsvinegar
  6. 3eggs
  7. Filling
  8. 2 bunchesSwiss chard, boiled
  9. 1onion, chopped
  10. Assorted seasonings of your choice
  11. 1 canbeef hash
  12. Beef bouillon or seasoning
  13. 1egg
  14. Breadcrumbs as needed, in case the filling is too wet

    First, prepare the filling: use only the Swiss chard leaves (save the stems for another dish).

    Drain the Swiss chard well, process it, and set aside.

  3. 3

    Sauté the onion in oil, add the Swiss chard, and cook for a few minutes. Add the seasonings and beef bouillon or seasoning.

    Add the canned beef hash, mix well, and cook a little longer until everything is combined. Remove from heat, immediately add the egg, and mix.

    If the filling is too watery from the chard, add breadcrumbs to thicken. Let cool. It's best to prepare the filling the day before.

    For the dough: make a well in the flour, add all the other ingredients to the center, and form the dough. It should be firm, not too soft.

    Roll the dough out thinly (I use an electric pasta machine) into a rectangle. Spread the filling over the dough, then cover with another sheet of dough.

    Mark the ravioli with a ravioli marker and cut them with a ravioli cutter.

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 10 minutes after the water returns to a boil, or until done to your liking.

    Drain and serve with your favorite sauce. This time, I made tomato sauce with grilled sausages.
