Ingredients

  1. 2 boneless skinless chicken breasts, cut in half
  2. 4 medium French baguette, opened
  3. lettuce head shredded
  4. Marinade:
  5. 1/4 cuplemon juice, or juice of 1 lemon
  6. 2 tablespoonsmustard
  7. 1 clovegarlic, minced
  8. 2 tablespoonsolive oil
  9. salt
  10. pepper
  11. Sauce:
  12. 1/4 cupparsley, chopped
  13. 4 tablespoonslight mayonnaise
  14. 2 tablespoonslemon juice, or juice of half a lemon

    To prepare the marinade, mix the lemon juice, mustard, garlic, salt, and pepper in a big bowl. Pour in the olive oil slowly while stirring so it mixes well.

    Put the chicken pieces in the marinade bowl making sure all the pieces are coated. Cover the bowl and refrigerate for at least 2 hours.

    Transfer the marinated chicken with the remaining marinade to an oven tray. Place in a heated oven to cook on both sides. If the chicken gets too dry, add some water and/or lemon juice.

    When the chicken is done, take out from the oven and leave to cool then slice into strips and divide into 4 equal portions.

    To prepare the sauce, mix the chopped parsley with the light mayonnaise, in a small bowl, then stir in the lemon juice.

    Toast the opened baguette sandwiches a little then generously spread sauce inside. In each baguette, add some shredded lettuce over the sauce followed by a portion of chicken strips and close.

    Serve warm.
