Bharela means stuffed in Gujarati. So Traditionally the besan mix has to be stuffed in the veggies. But this is a quick version that gives nearly the same taste and flavor.

Bharela means stuffed in Gujarati. So Traditionally the besan mix has to be stuffed in the veggies. But this is a quick version that gives nearly the same taste and flavor.

Take washed baby eggplants. Remove the crown and make 2 criss cross slits.

Similarly, take washed baby potatoes, peel them and make slits. (In case you don't have baby potatoes you may take regular ones and cut them into cubes.)

In a small pressure cooker heat 1 tablespoon. Once the oil is hot add jeera and let it splutter. Now a pinch of asafoetida and add washed potatoes and baby eggplant.

Saute for a minute. Add salt, half teaspoon chilli powder, half teaspoon turmeric powder and water

Close the lid of pressure cooker and cook it for 2 whistles.

Once the pressure settles off open the lid and check if the eggplant and potatoes are tender.

In another bowl, mix roasted gram flour, with all other powdered spices, salt and sugar and keep aside.

Heat a pan or kadhai. Add oil

Add jeera and let it splutter.

Now add the veggies and water from the cooker and give a stir.

Now add the mixed gram flour masala.

Give a stir gradually. Making sure not to mash the veggies.

Cook /simmer for 2 mins. on low flame.

You may add other veggies like peas, purple yam, onions etc.

This is a no onion-garlic version. If you wish you may add chopped green garlic with the besan mix. Of garlic pasted or minced garlic with the besan mix.
