Boil potatoes and let it cool. Peel and mash and keep aside.

Heat 1tsp oil and add mustard seeds to it. Let it splutter and then add the sliced onions and chopped green chillies to it. Fry till it changes colour then add sliced tomatoes and fry for 2 mins till the tomatoes are soft and mushy.

Then add mashed potatoes to it and sprinkle some salt and mix well. Switch off the flame and let it cool. Make small lemon size balls and keep.aside.

In a small bowl take besan and add little water and salt to taste and mix well. It should be a thick batter.

Heat oil in a kadhai for deep frying. Dip potato balls in the besan batter and deep fry till golden. Flame should be on medium. Fry all the vadas in batches and serve hot with mint chutney
