Take oil in a pan.

Add grated cauliflower and saute till all water dries. Add capsicum chopped and mix well.

Add in all masalas. Mix well and in this stage u can add 2 spoons of water to roast masala. Add boiled mashed potatoes. Mix well to combine. Filling is ready.

Knead Aata with required water and salt and make dough and add little oil and make it smooth. Make medium size balls and keep aside. Take a ball and roll into small disc and fill in the masala. Close from all sides and again roll into a thick chapati.

Take a tava and let it heat. Place the paratha on it and cook on one side and then flip over other sides(same as you do with chapati) when it puffs up add half a spoon of ghee on both sides.

Serve with curd with salt pepper. Enjoy mixed veg paratha.
