Ingredients

Makes 15 servings
  1. 8 cupsflour (about 1 kg)
  2. 2 cupsmelted shortening (about 500 grams)
  3. 2 1/2 cupscola (from a 600 ml bottle)
  4. 1 pinchsalt
  5. 1 1/2 cupssugar (you can reduce or omit the sugar in the dough if you prefer it less sweet, depending on how sweet your filling is)
  6. Sugar and ground cinnamon (optional, for sprinkling on the empanadas)
  7. Filling
  8. 1-2yellow sweet potatoes, peeled
  9. 2apples, peeled
  10. Juice of 1 mandarin orange

    Make a well in the flour and add the melted shortening. Mix until crumbly, then gradually add the cola, kneading until you have a soft dough. Let the dough rest for two hours.

    Filling

    Cook the sweet potatoes and apples with sugar and a little water until everything is soft. Adjust the sweetness to your taste, then mash into a purée.

  4. 4

    Shape the empanadas to about 2 3/4 inches (7 cm) in size. Add the filling, seal the edges with beaten egg, bake, and while still warm, sprinkle with sugar and cinnamon.
