Ingredients

4-6 servings
  • 1onion
  • 1 clovegarlic
  • 1 canchopped tomatoes
  • Splashwhite wine vinegar
  • 1 tbsptomato purée
  • 2 tspcapers
  • 1/2 tspsugar
  • 250 gPotatoes (amount depends on size of dish)
  • 4cod fish fillet (other white fish or cut works too)

Steps

    Preheat oven to 200oC

  2. 2

    Fry onion and garlic

    Add tomatoes, 3 cans of water, vinegar, tomato purée, capers, sugar, salt and pepper and bring to the boil and simmer for 5min

    While boiling, peel and slice (5mm thick) the potatoes and lay in dish. Make two layers

    Pour the sauce over the potatoes, cover with foil and put in oven for 50 mins

    Uncover and heat for another 40min

  7. 7

    Stir and bury fish inside the juice. Put back in the oven for 40min
