Ingredients

  • 3purple eggplants (thinly sliced as desired)
  • 3/4 cupall-purpose flour (about 100 grams)
  • 1chicken egg (beaten)
  • Cooking oil
  • Salt and pepper seasoning
  • 6 clovesgarlic (finely chopped)
  • 20bird's eye chilies (sliced as desired)
  • Green onions (to taste)
  • Seasoning (to taste, I used Royco)
  • Salt (to taste)
  • 1/4 cupbutter (about 50 grams, I used Blueband)
  • Ground pepper (to taste)

Steps

  1. 1

    Prepare all the ingredients (I forgot to take a photo of the beaten egg and butter) hehe..

    Dip the eggplant slices into the beaten egg, then coat them evenly with flour.

  3. 3

    Heat oil in a pan, then add the flour-coated eggplant slices. Fry until they turn golden brown. Remove and drain. (Continue until all the eggplant is fried)

  4. 4

    Heat a new pan over low heat, sauté the prepared garlic until fragrant, then add the green onions and chilies. (I prefer the garlic slightly undercooked, but it's up to you)

  5. 5

    Once ready, add the crispy eggplant to the pan with the salt and pepper seasoning. Sprinkle with salt, pepper, and seasoning to taste, gently turning the eggplant. Done.

  6. 6

    Serve. Enjoy trying it 😊
