Ingredients

2-4 servings
  • 400 gmixed beans (tinned is easiest)
  • 2 tbspoil
  • 1lemon (or bottled lemon juice)
  • 2 tspgarlic puree
  • Small bunch fresh coriander (optional)
  • 2-3spring onions
  • 1/2 tsppureed ginger (optional)
  • Salt and pepper to season

Steps

  1. 1

    Pit drained beans into a bowl and mash with fork.

  2. 2

    Add juice from lemon, garlic and ginger, and a little oil and mix to combine.

  3. 3

    If using coriander, chop roughly and add to mixture with salt and pepper to season and mix.

  4. 4

    Put into ramekins and chill in fridge until ready to serve. Best served with fresh warm bread, flatbread or crackers.
