An amazing Condiment that is extensively used in Indian cooking. I prefer to use this in many of the Chaats, Aloo Parathas, Pakoras, Daal and many non veg dishes too. And every year, I make it in large quantities. Sun dried Mangoes are done quite easily. The only thing is that the strips should be as thin as possible so that they dry up really well and can be powdered with ease. The smell of it is so enticing. Nothing can be compared to self made or homemade things, be it freshly pound Masalas or Sun dried veggies, Badiyan, Papad or Pickles. You get that real satisfaction too.

    Wash and dry the raw mangoes. Let them dry on their own. Cut each into thin strips. It is important to cut into as thin strips as possible. I have used Kitchen Scissors for this.

    Spread them on a tray and dry in Sunlight for nearly a week. It can be sun dried for more days too. The strips should be fully dried. After that, grind to a powder. It will not be a fine powder but that's perfectly okay. It will be a little coarse as can be seen in the pictures. Store them in airtight containers and use as desired.
