Vegetable Pulao
Steps

Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.
Heat ghee and oil in a pressure cooker on low flame. Add bay leaf, cinnamon, clove, and sauté for few secs. Add chopped onion and sauté until it turns translucent in colour. - 2
Add chopped tomatoes and all the vegetables. Stir fry them for 2-3 mins.
Add soaked rice, garam masala powder, turmeric powder, red chilli powder and salt. - 3
Add soya chunks. Stir-fry them for few minutes.
Add 1 cup water and mix well. Close the lid and cook over medium flame for 2 whistles. And Turn off the flame. - 4
Let it cool at room temperature. Your delicious Pulao is ready. Serve hot and garnish with fresh coriander leaves.
