Cooking Instructions

First, preheat the oven to 350°F (180°C), using both upper and lower heat if possible.

Peel the potatoes, rinse them, and cut them into cubes that aren't too thick. If you prefer, you can also slice them. Place the potatoes in a microwave-safe container with a lid (or cover with plastic wrap with a few holes if you don't have a lid), add just enough water to cover the bottom, and sprinkle with a little salt. Microwave on high for about 10 minutes, until the potatoes are tender.

Check that the potatoes are soft; if not, microwave for a few more minutes.

Beat the eggs, add the potatoes, season with salt to taste, and pour the mixture into a round oven-safe baking dish that you have brushed with olive oil. Using a round dish will give your tortilla a nice shape.

Bake in the oven for about 15 minutes, depending on your oven. Check for doneness by inserting a toothpick or knife in the center.

About 5 to 10 minutes before taking the tortilla out of the oven, drizzle a little extra virgin olive oil over the top to help it brown. Once it's done, let it cool slightly before removing from the dish—be careful not to burn yourself. It comes out easily, even when cold. For a healthy side, serve with sautéed peppers. Enjoy!
