Ingredients

  • 2.2 poundsground camel meat, medium grind (about 1 kilogram; can substitute ground beef or lamb)
  • 1/2 cupdry bulgur wheat (about 80 grams), any brand, picked over
  • 1onion, finely chopped, mixed with 1 hot pepper, finely chopped
  • 1 teaspoonall-purpose flour
  • 1egg
  • 1/4 teaspoonbaking powder
  • 1small piece lamb fat, finely chopped
  • Pinchsalt and black pepper
  • Kofta spice mix

Steps

  1. 1

    Mix all the ingredients together thoroughly until well combined.

  2. 2

    Make sure the egg is fully incorporated and no longer visible.

  3. 3

    Cover and refrigerate the mixture for 2 hours.

  4. 4

    Shape the mixture onto skewers or thin wooden sticks.

  5. 5

    Lightly oil your hands with oil, water, or onion juice while shaping the kofta.

  6. 6

    Arrange the kofta on a baking sheet and bake in the oven at medium heat until fully cooked.
