Ingredients

6 servings
  1. 1/2large sweet potato, roasted
  2. 2 cupsAP flour
  3. 1 tbspbaking powder
  4. 1 tspbaking soda
  5. 1 tbspcinnamon
  6. 1 tspallspice
  7. 1 tspground ginger
  8. 1 tspground cloves
  9. 1 tspnutmeg
  10. 1large egg
  11. 11/ cup +2 tbsp whole milk,
  12. 1/3 cupshortening, melted

Steps

  1. 1

    Sift together all of the dry ingredients.

  2. 2

    Cream together sweet potato and egg, then add milk and stir to combine.

  3. 3

    Add the dry ingredients to the wet and mix until just combined.

  4. 4

    Cook 1/4 cup batter on a well oiled griddle or cast iron pan until done.
