Steps

Roast the baingan till it's completely cooked and tender. With a knife check if done.

Heat oil in pan add ginger garlic green chilli paste and saute add onion and tomato curry leaves

The tomatoes stirring often, till the oil starts separating from the mixture. now add all powdered masala stir and mix well then add mashed eggplant and mix well.

Garnish with coriander leaves Serve with jawar roti
