An authentic kabab recipe from my beautiful city Hyderabad with it's melt in mouth texture. These aromatic and flavourful kababs are the perfect starters that can be served in any dinner party. Kids will love them too. These make for the most versatile options and hence you just need your imagination to spruce up something exotic or as simple as Shaami Kabaab Wraps just like I did. The recipe is already on my account. These lovely Kabaabs are a treat to the tastebuds and are a prominent feature at mealtimes in many a households in the City. They are best paired with another equally lovely recipe from my City which is Hyderabadi Khatti Daal. Shallow fried and done in a few minutes, these can be made and stored in airtight containers with Cling film or Aluminium foil in layers so as to not to stick to each other. They stay good for over a month in the freezer.

Ingredients

45 minutes
15 servings
  • 1 kgMutton boneless or Mince
  • 2 tspSalt
  • 2 tspGinger-garlic paste
  • 1 tspTurmeric powder
  • 1 tspGaram masala
  • 1 tspCaraway seeds
  • 1 bunchCoriander Leaves finely chopped
  • 1small bunch of Mint Leaves
  • 1small Lemon
  • 1Onion medium sized finely chopped
  • 3/4 cupBengal Gram or Chana Da
  • 1/4 tspCubeb Pepper powder
  • 3 tbspOil
  • 3-4Green Chillies chopped
  • 11/2 cupsWater

Steps

45 minutes
  1. 1

    Soak dal for an hour. Add all the ingredients including the dal to a pressure cooker. Except the Lemon. Reserve it for later use. Also add half of the Coriander and Mint Leaves only. Pressure cook for 10 whistles or more as required with minimal water. Do not add more of it.

    Let the pressure settle down. Open the lid and cook until whatever water that is remaining dries up completely. Grind to a smooth paste and mix in the other half of Coriander and Mint Leaves along with the juice from one small sized Lemon.

    Form either round or oval shaped patties and shallow fry them on a low heat until done on both the sides. Shallow fry them in little oil before serving so that they are hot and crisp. Enjoy!
