Gather all the ingredients for the pav bhaji. Peel and mash the boiled potatoes. Rinse the frozen peas in water 2-3 times, then boil them for 5 minutes and drain.

Finely chop the onions, tomatoes, cabbage, and bell pepper using a food chopper or by hand. The finer the vegetables are chopped, the better the texture of the bhaji.

Heat cooking oil in a large skillet and add 1 tablespoon of butter. (Adding butter directly to the pan can cause it to burn.) Add the green chilies and ginger, and sauté. Then add the onions and cook until they turn golden. Add a little salt to help the onions soften faster. Next, add the tomatoes and cook until the oil separates at the edges.

Add the finely chopped bell pepper, cabbage, potatoes, and peas to the skillet. Cook until all the vegetables are soft, then add the pav bhaji masala and red chili powder. Sauté well.

Mash the bhaji mixture using a potato masher or the back of a spoon. Add water and salt as needed, and cook for another 4-5 minutes.

Add the beetroot water to the bhaji and cook a bit more. The bhaji is ready. Top with chopped cilantro.

Spread a little butter on a griddle or skillet, sprinkle some pav bhaji masala, and toast the dinner rolls (pav) on it. Garnish with cilantro.

Serve the hot pav bhaji with chopped onions and cucumber on the side.
