Ingredients

15-20 mins
serves 4 servings
  • 500 gPenne Pasta
  • 440 gChopped Tomatoes
  • 200 gsliced Chorizo
  • 1 teaspoondried Basil
  • 1 teaspoondried Oregano
  • 1Finely chopped Onion
  • 4Finely chopped garlic cloves
  • 1.5 tablespoonssugar
  • Small tub of Mascarpone
  • Freshly grated Parmesan for garnish
  • Fresh torn Basil leaves (optional garnish)

Steps

15-20 mins
  1. 1

    Boil 500g of Penne pasta in salted water.

  2. 2

    Whilst the pasta cooks, fry onion and garlic until translucent, in 2 tablespoons of oil, preferably Olive Oil.

  3. 3

    Add the sliced Chorizo and gently fry for 3 minutes and until the oil turns orange in colour.

  4. 4

    Stir in a 440g of good quality chopped, tinned tomatoes. Also add the dried herbs and sugar.

  5. 5

    Allow the sauce to simmer gently for 5 minutes before adding 3 dessert spoons of mascarpone and a handful of grated Parmesan. Simmer for a further 5 minutes till the sauce reduces a little.

  6. 6

    Drain your pasta well then add to the sauce mixing well till all pasta is submerged and coated in sauce.

  7. 7

    Serve with fresh crusty bread and butter. And enjoy!
