Steps
- 1
Wash all ingredients thoroughly. Boil the quail eggs, pork liver, and shrimp separately (save the shrimp boiling water to add to the broth for extra flavor). Simmer the pork bones and add the pork loin to cook until just tender, then remove. Season the broth to taste. Sauté minced garlic until fragrant, then stir-fry the ground pork with a pinch of salt and pepper.
- 2
Make crispy fried garlic. Bring a pot of water to a boil and quickly blanch the noodles and some bean sprouts, then place them in serving bowls. Add the cooked ground pork, sliced pork loin, sliced pork liver, peeled shrimp, and peeled quail eggs to each bowl.
- 3
Top with chopped garlic chives, green onions, and cilantro. Pour hot broth over everything, then add some fried garlic and a sprinkle of pepper. Enjoy!
