Pickles add a wonderful tangy crunch to this simple chicken salad. If you like your chicken salad a little sweet, relish is the perfect touch.

Ingredients

  1. 3 C.Cooked and shredded chicken
  2. 1 C.Dill pickles sliced
  3. 1/2Red onion, finely chopped
  4. 2Celery stalks, finely chopped
  5. 2/3 C.Mayonnaise
  6. 1/4 C.Dijon mustard
  7. 2 Tbsp.Red wine vinegar
  8. 1 Tbsp.Chopped dill
  9. 1/2 tsp.Red pepper flakes
  10. to tasteSalt and pepper
  11. 3pitas, split and toasted

Cooking Instructions

    Preheat oven to 400°F. In a large bowl combine the shredded chicken, pickles, red onion, and celery.

    In another bowl stir together mayonnaise, Dijon mustard, red wine, vinegar, and dill. Season with red pepper flakes, salt, and pepper.

    Pour dressing over chicken and tools to coat.

    Place split pitas on a baking sheet, drizzle with olive oil and sprinkle with salt. Bake in oven 5 minutes until lightly browned and crispy. Serve with chicken salad.
