This bread is super homemade. Normally, we have all the ingredients for the original recipe at home, but I wanted to make it with lighter ingredients (substituting flour with oats and amaranth, sugar with agave syrup, and butter or margarine with coconut oil).
My goal is to share something delicious that remains healthy and low in calories.

And of course, remember to eat everything in moderation and without excess!

If you exercise... this bread is perfect for after your workout as it helps you recover some of the energy lost and is also an excellent food for your young children.

Ingredients

  2. 3eggs
  3. 1/2 cupalmond milk or low-fat milk
  4. 1/2 teaspoonvanilla extract
  5. 3 tablespoonsorganic coconut oil
  6. 1 teaspoonground cinnamon
  7. 1 teaspoonbaking powder
  8. 1 teaspoonsalt or baking soda
  9. 1 cupoat flour
  10. 1 cupalmond flour or amaranth
  11. 3 tablespoonsbrown sugar or agave syrup
  12. 10walnuts, chopped
  13. 10cranberries
  14. 10raisins
  15. 10almonds

    First, mash the bananas with a fork, then add the coconut oil and other liquid ingredients, mixing manually until the mixture is frothy. This will help the bread rise when baking, as you are incorporating “air” into the mixture.

    Next, mix all the dry ingredients in another bowl.

    Finally, add the walnuts, cranberries, and other ingredients, mixing manually—folding all the ingredients in the same direction. You don't need an electric mixer (the reason is so you can enjoy the pieces of fruit and nuts when eating it).

    In a rectangular mold (about 8 inches long) previously greased and floured with oat flour, pour the entire mixture in the center (it will spread to the sides on its own).
    Place your mold in the oven for 35-40 minutes at 350°F (180°C). Your bread will be ready when you insert a fork or toothpick and it comes out clean.

    I know it smells super delicious and you want to finish it all... But, you still need to let it cool for a few more minutes before removing it from the mold—do it carefully.
