Adai is a healthy take on a normal fermented Dosa from the South Indian States in India. This crispy, lacy, super Lentil Dosas are not only healthy but quite filling too. My version is an all Green one with Curry and Coriander Leaves added along with Green Chillies. Tastes heavenly and just a bite will make you ask for more and more. This one is an anytime Dosa for my children. As this is made instantly, you need not worry about fermentation too. It's enough if all the Lentils are soaked for 2-3 hours. But if you have time, leave them overnight. So next time when you crave for slurpy Dosas, spread these one's for your loved ones and families.

Soak all the lentils and rice for about 2-3 hours. Grind them all to a flowing consistency batter just like that of a regular dosa batter.

Leave it aside for an hour. Heat a heavy iron griddle or a nonstick dosa pan. Pour a ladleful of the batter onto it. Spread uniformly and smear it with oil on top. Also, drizzle oil on the sides too. Make all in the same way. Ghee or clarified butter can also be used for a healthy flavourful dosa.

Crispy and healthy super dosas are ready for breakfast in no time. There is no need to ferment this batter. But it is highly recommended by me to keep it aside for an hour or two.

After 2 hours, make your dosas in the regular fashion as we do for a normal fermented one. Serve them hot with onion tomato chutney. Enjoy! Yum!
