Ingredients

  • 3zucchini
  • 4Roma tomatoes
  • 2 containersnonfat yogurt
  • 1/4 containeryogurt (use as measure) Dijon mustard
  • 1whole egg + 1 egg yolk
  • Salt, pepper
  • 1 sheetpuff pastry
  • 1 teaspoonherbes de Provence

Steps

  1. 1

    Prepare the vegetables:
    Wash and slice the tomatoes and zucchini into thin rounds.

    Prepare the filling:
    In a mixing bowl, combine the yogurt, mustard, salt, and pepper.
    In a separate bowl, beat the whole egg and the egg yolk together.
    Add the eggs to the yogurt and mustard mixture.
    Mix everything well.

  3. 3

    Assemble the tart:
    Roll out the puff pastry in a tart pan and prick it with a fork.
    Spread the filling evenly over the puff pastry.
    Arrange the tomato and zucchini slices in a staggered pattern on top. Sprinkle with herbes de Provence.

  4. 4

    Bake at 340°F (170°C) for 45 minutes.
