Light Zucchini and Tomato Tart
Steps

Prepare the vegetables:
Wash and slice the tomatoes and zucchini into thin rounds. - 2
Prepare the filling:
In a mixing bowl, combine the yogurt, mustard, salt, and pepper.
In a separate bowl, beat the whole egg and the egg yolk together.
Add the eggs to the yogurt and mustard mixture.
Mix everything well. - 3
Assemble the tart:
Roll out the puff pastry in a tart pan and prick it with a fork.
Spread the filling evenly over the puff pastry.
Arrange the tomato and zucchini slices in a staggered pattern on top. Sprinkle with herbes de Provence. - 4
Bake at 340°F (170°C) for 45 minutes.
