Cut off stems, pull down to remove stringy veins, and repeat on other side. Then chop the fava beans.

Wash and dry the green fava beans in a strainer.

Peel the garlic and finely smash

Wash the coriander, leaving to dry well, chop finely

In a cooking pot, pour oil, add the smashed garlic and coriander, stir well until the colour of garlic turns red

Add the chopped fava beans and salt, mix without stirring.

(shake the pot from the bottom to the top and mix well)

Cover the pot and cook on low heat till well done only shaking the pot from time to time

Put the fava beans in a serving dish. Serve cold with a fresh thyme and onion salad as desired.
