Make a purée of one tomato and cut two other tomatoes into small pieces. Set aside.

Cut capsicums into small pieces and set aside

In a wok heat olive oil add cumin seeds, and fry the chopped onions, capsicums until soft.

Add chopped tomatoes and sauté until softened. Add red chilli powder, paprika and saute. Add tomato purée and sauté further for 2-3 mins.

Make two holes in the wok and slowly break the eggs.

Cover in slow flame until the eggs are set. Add chopped coriander leaves and salt and black pepper powder. Enjoy hot
