Ingredients

8 pancakes
  1. 1 1/2 cupsall-purpose flour
  2. 2 1/4 tspsugar (coconut sugar)
  3. 1 1/4 tspbaking powder
  4. 3/4 tspbaking soda
  5. 1egg (beaten)
  6. 1/2 cupshredded coconut (sweetened)
  7. 3/4 cupbuttermilk
  8. 1 cupcoconut milk
  9. 1 1/4 tbspmelted butter
  10. Milk sugar syrup
  11. 1/4coconut milk
  12. 1/4Coconut sugar

Cooking Instructions

30 mins or less

    In a bowl mix all dry ingredients together.

    Add all the wet ingredients to the beaten egg and whisk until well combined.

  3. 3

    Make a well in the dry ingredients and pour in wet ingredients and stir in well(do not over mix).

  4. 4

    Heat a non-stick pan and grease lightly with little butter using a brush.

  5. 5

    Add 1/4 of the batter and spread to a rounded shape. Cook each side till golden brown. Repeat process till done.

  6. 6

    For the syrup: pour ingredients in a pan and leave to a boil.

  7. 7

    Take it off and leave it to cool.
