In a bowl, mix 2 cups whole wheat flour, 1 tablespoon rice flour, 1/2 teaspoon salt, and carom seeds. Add water as needed and knead into a dough. Cover and let it rest for 15 minutes.

Take a portion of dough and roll it into a ball. Roll it out into a circle. Brush ghee on top and sprinkle the spice mix. Add chopped cilantro and mint.

Fold the dough like a fan, then roll it into a spiral. Gently press and roll it out again.

Heat a skillet on the stove. Place the rolled paratha on the skillet and cook both sides, brushing with ghee, until golden brown. Masala lachha paratha is ready. Serve hot with cilantro chutney.
