Cut the pork into medium-sized pieces.

Blend the vinegar, achiote paste, orange with pulp, garlic, and salt until smooth.

Cover the pork with the blended mixture and marinate overnight, or let it rest for at least 2 hours.

Transfer to a pot and cook over high heat until it starts to boil. Then reduce to very low heat and cook for 2 1/2 hours. Stir and check every 20 minutes. The meat should be tender enough to shred easily with the back of a spoon.

To serve: Make tacos with chopped cilantro, cabbage, and the pickled onions, or make a sandwich by layering fresh queso fresco and topping with the meat and vegetables.
