Heat the oil. Add ginger to it. When it’s fried add grated tomato, pepper, onion and garlic.

Add seasoning and stir. Add curry and stir. Add egusi and allow it to fry. Until it becomes like the one shown below.

Add water. Until it’s boiled. Add the spinach leaves and stir. Allow to cook for 7 minutes.

If you want it very green then do not cover the pot. Serve while hot🥵 thank you ☺️
