Here are the veggies that were hanging out in my fridge

Peel and cut the veggies into bite size pieces, mix them with some salt and oil in a casserole dish and bake them in the oven on high (gas 5) or 200-250 degrees in electric oven, till all veggies are soft when pieced with a fork. Turn the veggies from time to time while baking so they bake evenly.

Cook the noodles in water according to package instructions, use the spice that comes with it, if you want.When ready, add it on top of veggies

Lets make the sauce: mix the sour cream with lemon juice and zest, sugar, salt, cheese and eggs and pour it on top of the pasta. Now it can go back in the oven till sauce becomes golden. Enjoy

Such a delicious combination of veggies that I am sure everyone will enjoy eating. This was something I had wanted to try for some time. After looking at a few recipes I found that they all had a few food ideas I liked and I had a few I wanted to introduce. I thought what do I want out of this dish. I wanted it to have a slight smokey flavor like a good baked potato cooked on the grill would. I wanted the cheese to be creamy like it gets when the cheese mixes with the sour cream on a freshly cut baked potato. I wanted the chicken to complement it but not taste entirely the same. I saw a video of a lady making this because her kids requested that she tried making it for dinner. My kids love ramen noodles but I don't give it to them often so they were excited to try this. Its not expensive to make and its pretty easy to make as well. I've changed her recipe a little to my liking. It may not be very healthy but its a unique way to use ramen noodles when my kids are craving it and it gets my kids to eat their vegetables on a budget that's really tasty. carrie
