Ingredients

  1. 2 cupsdiced brinjals
  2. 1 1/2 cupsdiced potatoes
  3. 1/2 cuppeas
  4. as per taste Salt
  5. 5 tbspoil
  6. 1/4 spoonasafoetida
  7. 1green chilli
  8. 1/2 tspmustard seeds
  9. 1/2 tspjeera (cumin)
  10. 1 tspred chilli powder
  11. 1/4 tspturmeric powder
  12. 1/4 tspkitchen king masalo(if available), NOT garam masalo
  13. 1tomato chopped
  14. 3 tbspchopped coriander to garnish

    Ensure that brinjal dices are slightly bigger than potato dices as brinjals get cooked faster than potatoes. Heat oil in a pressure cooker. Splatter mustard and jeera. Next add asafoetida, turmeric and Chilli powder. Quickly add the veggies in it. Add salt and combine everything well.

    Add tomatoes. Saute until the spices are cooked and the veggies release oil. Add water till the surface of the veggies.

    Bring it to boil. Taste and adjust seasoning if needed. Cover the cooker and wait for 2 whistles on low to medium flame.

    Garnish with chopped coriander leaves and Serve hot with roti and/or rice/khichdi. It tastes awesome with dry achar (methi) masala.
