Steps

Mix the dry ingredients, adjust the seasoning.

Add the wet ingredients: curds, doodhi.

Mix well. Add water only if the dough is not soft enough. Let to dough rest for 10 minutes. Not more. Knead the dough once again, apply a little oil on your palms if needed. Make equal size balls. Roll the dough as for roti, not too thick, neither too thin.

Cook on the tawa on medium flame. Flip when bubbles appear on the thepla & drizzle some oil on the sides. Then increase the flame & quickly cook the thepla on both sides.
