Steamed Flan (Condensed Milk Recipe)

Caramel: Melt 1/4 cup sugar (about 50 grams) with 4 teaspoons water (about 20 ml) until it turns dark brown. Add a few drops of lemon juice, stir well, then pour into the steaming trays.

Mix 1 1/4 cups sweetened condensed milk (about 300 ml) with 3 cups water (about 700 ml) and heat until warm, around 160°F (70°C).

Crack the eggs into a large bowl, beat the yolks and whites together (do not whip) ➡️ then gradually pour in the warm milk, stirring continuously. ➡️ Strain the mixture twice for a smoother texture, then add a few drops of vanilla and a pinch of salt (about 1/4 teaspoon) and mix well.

Gently pour the milk mixture into the steaming trays.

Boil water and preheat the steamer. Then reduce the heat to maintain a gentle simmer. ➡️Place the trays in the steamer and steam for about 30-40 minutes. The flan is done when a toothpick inserted comes out clean.
