Kalojam
This is a very popular Bengali sweet. It resembles the fruit jamun.

Steps

Boil the milk. Switch off the flame. Mix 2 tablespoon water with the lemon juice. Add the mixture to milk gradually and keep stirring till the milk cuddles.

Strain the chena. Wash under running water to get rid of the lemony smell. Squize the water and leave for 30 minutes.

Take the chena in plate. Smash it with the help of palm to make it smooth.add moida, milk powder, cardamom powder, baking soda and red food colour with it. Kned a smooth dough.

Divide in to equal sized balls. Shape them as jamun.

Heat sufficient oil in a pan.fry the jamuns at low flame till the are dark in colour.remove from the oil and let it cool.

Boil sugar and water for sugar syrup. Add lemon juice. When it starts boiling add the fried jamuns. Boil for 20 minutes.

Switch off the flame. Let them in the sugar syrup for at least 1 hour.

Remove from the syrup and enjoy delicious kalojam sweet
