Chocolate Sandesh

Sandesh or sondesh like they call it in Bengal is a famous sweet made with chena or curdled milk and mildly sweetened. It has a soft crumbling texture that melts in the mouth. Here I have recreated the traditional Bengali sweet with a lovely chocolate flavour. Topped with chopped chocolate it provides a combination of soft chena texture with crunchy chocolates.

Here I have recreated the traditional Bengali sweet with a lovely chocolate flavour. Topped with chopped chocolate it provides a combination of soft chena texture with crunchy chocolates.

Bring the milk to a boil. Stir in the lemon juice. Keep stirring till the curd and whey separates.

Place a kitchen napkin on a large sieve and pour the mixture. Collect all the curd and discard the whey (water). Wash it once with fresh water.

Squeeze out all the water and let the chena cool down for 30 minutes. Leave it in the sieve.

After 30 minutes remove the chena in a big flat bowl (paraat) and mash it nicely with your palms for at least 5 minutes. It will become soft and smooth.

Now add the sugar and mash again.

Time to add the coco powder. Mix it nicely and mash for one more minute.

Now transfer the mixture to a non-stick pan and cook it on low heat for 3-4 minutes only. This helps in removing the raw smell and taste of chena. Please do not overcook as the sandesh will become dry.

Remove the mixture in a plate, mix in the rose water and cool for 5 minutes.

Now you can either make round (laddu) shape of this mixture or a burfi shape. I have made a burfi shape. So I transferred the mixture to a rectangular cake tin. Flatten it out using a spatula.

Put the chopped chocolate on top. Press lightly. Let it set in the fridge for 1-2 hours.

Once set cut into small squares. Carefully lift up the pieces from the tin, the chocolate might fall off in the process. So you can just put it back.

Garnish with chopped pistachios. Yummy chocolate sandesh is ready. Enjoy eating and sharing.
