Filipino Food Series: Lola Sayong’s Suman w/ Coconut Jam (Traditional Glutinous Rice Cake)

Trivia: Suman is a Filipino traditional rice cake that’s usually eaten during breakfast or afternoon snack paired with coconut jam, cocoa chocolate and coffee! This recipe was from my Lola’s (grandmother). She used to cook and sell this around our community when she was still alive. She literally did all the hard work from getting banana leaves, running them over fire to make the leaves soft, wrapping ( the most tedious process for me) cooking to selling. Hats off to my grandmother! ❤️

Cooking Instructions

Wash the glutinous rice until the water is almost clear. Soak the glutinous rice in water overnight

Drain the water and then add the lye water then mix

Wrap two spoonful or glutinous rice in soft banana leaves (run banana leaves over fire to make it soft). Tie pairs of rice cakes together with strings or straw

I used a small sauce pan for 8 pcs of rice cake pairs compact and added 2-3 cups of water. Let it cook for about 2 and half hours in medium fire

For the coconut jam. Boil the coconut milk mixed with sugar until it’s golden brown and thick.

Pohulpohul Cake or Itak Pohulpohul is a traditional Batak snack, which comes from Tapanuli. Shaped like a fist knuckles, similar to Itak Gurgur because the shape is made with quite simple tools --- namely the fingers of your fist, which is why it is called "pohulpohul" (which means 'fist').There is little difference between Pohulpohul and Gurgur, among others : Pohulpohul only uses flour, unlike Gurgur which is mixed with grated coconut. Pohulpohul is steamed before serving, but Gurgur can be directly eaten after it is created. Pohulpohul cake contains nutrients, such as Carbohydrates, Protein, Vitamin B (B1, B2, B3, B6), Iron, Calcium, Fat, Omega 3 and Fiber.Pohulpohul is often brought as a souvenir for the family who comes to visit for a customary speech, for example to discuss marriage plans for men and women both parties. First trial :) texture of the cake is a bit chewy because of the glutinous rice flour :) I used 21 cm diameter pan.The oil/butter used in this recipe is quite a lot. Because the glutinous rice flour somehow absorb a lot of moisture otherwise the cake will get harden the next day. I have learned how to make sakura mochi, but I didn't have rice flour, domyoji flour, or a cherry blossom leaf...I wanted to make a sakura mochi easily, so I came up with this recipe.-A little amount of the red food colouring is enough to turn the rice pink, so don't add too much. If you add too much, the rice turns red.-A pinch of salt gives the rice a salty kick, and it will taste like the authentic sakura mochi. If you don't have the salted cherry blossom leaf, add little more salt in the rice to adjust the taste. I taste the mixture at the Step 3, and adjust the taste to my liking.
