Take 1:1 rice and dal (can be a mix of toor, moong dal). Wash it and soak it..... For protein rich take 1 portion rice to 2 portions of dal mix. Moong is best followed by masoor and toor.

Heat ghee with mustard and cumin seeds. Add bayleaf (optional). Add little ginger garlic and chilli. Add Kashmiri chili or red chili.

Add onion (keep some for later) and saute it well. Add tomato.

Add turmeric (0.5 spoon for 1 cup rice), little red chilli powder, hing and salt.

Add the dal and rice and saute for 2 minutes. Add tamarind extract.

Add 4 times volume of dal+rice. 8 cups water for 1 cup rice and 1 cup dal. Pressure cook for 3-4 whistles.

Add chopped coriander. Optionally you can add Tadka (ghee, mustard, jeera, dried red chilli, garlic, onion). You can also add crispy veggies like fried onion or baked okra.
