Nan's Beef & Noodles

The important components to the tastiest pot of beef & noodles are the rich broth, the right noodles, and low, slow cooking.
NOTES:
The broth ingredients may sound a bit odd, but trust me; it'll be SO flavorful! The addition of the red wine vinegar makes salt unnecessary....DON'T add salt!....and it tenderizes the beef. There won't be any vinegar flavor in the finished dish.
Cut your stew beef pieces in fourths. You want them smaller for more uniform distribution with the noodles.
DON'T substitute a different brand noodle. Reames frozen noodles are thick and chewy, hold up well to my slow cooking method (and when leftovers are reheated), and they add the perfect creamyness to the broth.

Cooking Instructions

In large soup pot, heat oil over medium to medium-high heat. Add the onions and beef and cook for 15 minutes, stirring occasionally. Stir in minced garlic and continue cooking 5 more minutes.

Stir in the seasonings and red wine vinegar. Cook 1 minute more.

Stir the Better Than Bouillon bases into the hot water. Add to the pot, along with the 2 boxes of broth. Increase heat and bring to a boil, stirring frequently.

When boiling, reduce heat to lowest temperature and cover the pot. Cook on low for 2 hours, stirring every 20 minutes.

Add Reames frozen noodles, stir, cover the pot and continue cooking on low another 1 hour and 45 minutes, stirring every 15-20 minutes.

Serve. This goes well with buttered crusty bread!

This bourguignon-style hearty beef stew is a very flavorful comfort food that's relatively easy to prepare. A complete and balanced meal, it comes together in one pot (cast iron Dutch oven works best) that slow cooks in the oven. The only bacon I ever buy is Wright brand thick cut. It's excellent! I also love using whole garlic cloves in this because roast garlic is SO delicious (and I'm a junkie when it comes to garlic and onions). I buy the bag of already peeled fresh garlic cloves just to save a little work. The whole garlic cloves get a deep, roasted flavor and melt into the broth completely.Leftovers freeze really well and are just as delicious when reheated! I like to vacuum seal for the freezer. One of my very favorites, this quick soup is impressive and delicious. Prepare all the add-ins ahead of time, even the day before, and put them in a large divided dish, refrigerated until 30 minutes before dinner. Each person puts the ingredients they want into their empty soup bowl, the boiling hot soup is ladled in, then the hot fried rice cakes are added for the sizzle. While you can make your own rice cakes, the process is involved and time-consuming. I find it's MUCH easier to buy them (Asian market or Amazon).You can easily change up the optional ingredients to suit your own taste. Use as few or as many of the ingredients listed here. But don't skip the dried shitake mushrooms! They add a rich umami flavor to the broth that you don't get from fresh shitakes.
