Nan's Beef & Noodles

The important components to the tastiest pot of beef & noodles are the rich broth, the right noodles, and low, slow cooking.

NOTES:
The broth ingredients may sound a bit odd, but trust me; it'll be SO flavorful! The addition of the red wine vinegar makes salt unnecessary....DON'T add salt!....and it tenderizes the beef. There won't be any vinegar flavor in the finished dish.

Cut your stew beef pieces in fourths. You want them smaller for more uniform distribution with the noodles.

DON'T substitute a different brand noodle. Reames frozen noodles are thick and chewy, hold up well to my slow cooking method (and when leftovers are reheated), and they add the perfect creamyness to the broth.

Ingredients

6-8 servings
  1. 3 T.Olive oil
  2. 1lg. Onion, diced
  3. 1 lb.Stew beef (see Note above)
  4. 5 clovesgarlic, minced
  5. 1/2 tsp.Thyme
  6. 1/2 tsp.Rosemary
  7. 1/2 tsp.Pepper
  8. 1/3 c.Red wine vinegar
  9. 32 oz.box Beef broth
  10. 32 oz.box Chicken broth
  11. 1 c.hot water
  12. 1 tsp.Better Than Bouillon base, beef
  13. 1 tsp.Better Than Bouillon base, chicken
  14. 2pkgs. Reames frozen noodles

Cooking Instructions

    In large soup pot, heat oil over medium to medium-high heat. Add the onions and beef and cook for 15 minutes, stirring occasionally. Stir in minced garlic and continue cooking 5 more minutes.

    Stir in the seasonings and red wine vinegar. Cook 1 minute more.

    Stir the Better Than Bouillon bases into the hot water. Add to the pot, along with the 2 boxes of broth. Increase heat and bring to a boil, stirring frequently.

    When boiling, reduce heat to lowest temperature and cover the pot. Cook on low for 2 hours, stirring every 20 minutes.

    Add Reames frozen noodles, stir, cover the pot and continue cooking on low another 1 hour and 45 minutes, stirring every 15-20 minutes.

    Serve. This goes well with buttered crusty bread!

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 8 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
