Beef Bulgogi (불고기)

Here's my own bulgogi recipe. Any thinly sliced cut of beef can be used (this time I used brisket/short plate), and the recipe works with pork or even chicken. Korean nashi pears have a flavour that is kinda halfway between a regular pear and an apple so an apple like a red gala can be a reasonable substitute. It's used to tenderise the meat, but it takes time to work... I initially tried to cook it after only one hour and the meat was still quite tough. Maybe pineapple might be more effective but I hear one needs to be careful with it. 🇰🇷

Ingredients

  • Marinade
  • 6 tbspJapanese or Korean soy sauce
  • 2 tbspmirin
  • 2 tbspsugar (optional)
  • 1/2Korean nashi pear or 1 small red apple
  • 1/2onion (about 80 g)
  • 3garlic cloves
  • 1/4 tspfreshly ground black pepper
  • 1 tbspsesame oil
  • Main
  • 1 kgbeef, sliced into thin (approx. 3 mm) slices
  • 1onion, sliced
  • 1 tbsptoasted sesame seeds
  • 1 tbspsesame oil
  • 1 tbspvegetable oil
  • 1carrot, julienned (optional)
  • 2 stalkschopped scallions (optional)

Steps

    Combine all marinade ingredients except the sesame oil in a blender. Puree until smooth. Pour marinade over beef and add sesame oil. Mix thoroughly, and let marinate for 4 hours at room temperature or overnight in the refrigerator.

    Set a skillet on medium high heat with both the vegetable and sesame oil until hot but not smoking. Fry the meat and vegetables for 3–5 minutes or until cooked to desired level of doneness. Toss in sesame seeds and give a quick stir.

    Serve with steamed rice and Korean side dishes (e.g. kimchi).
