Imarti is one of the famous sweets from Uttar Pradesh, made with urad dal (split black gram).
Steps

Rinse the urad dal thoroughly and soak it in water for 4-5 hours. Drain the water and grind the dal into a fine paste using a blender.

Transfer the paste to a bowl and beat it well by hand until it becomes light and fluffy. Add 2 drops of orange food coloring and mix well.

Heat ghee or oil in a deep pan. Fill the urad dal batter into a piping bag or a squeeze bottle.

In a separate pot, combine the sugar and 1 cup (about 240 ml) water to make a syrup. Add the saffron strands and cardamom powder. Cook until the syrup is slightly sticky, then remove from heat.

Once the ghee is hot, pipe the batter into the hot ghee, shaping it into imarti rings. Fry until golden and crisp on both sides, then remove from the ghee.

Dip the fried imartis into the warm sugar syrup for a few minutes, then remove. Sprinkle sliced pistachios on top.

Delicious imarti is ready. You can also add edible silver leaf (chandi vark) on top if you like.
