Ingredients

40-45 mins
4 servings
  • 1/4 cupOil
  • 500 gmsJackfruit / Kathal, cut into pieces
  • 1/4 cupGhee
  • 1 tbspCumin Seeds / Zeera
  • 1Bay Leaf
  • 4Whole Peppercorns
  • 4Cloves
  • 3Dried Red Chillies
  • 1/2 tspFenugreek Seeds / Methi Dana, powdered
  • 1 tspFennel Seeds, powdered
  • 1 cupOnion, grated
  • 1 tspGinger Paste
  • 1 tspGarlic Paste
  • 1/2 cupCurd
  • 1small Raw Mango / Kairi, peeled & diced
  • 1 tspGaram Masala Powder
  • to tasteSalt
  • 1/2 tspTurmeric Powder
  • 1 tbspCoriander Powder
  • 1 tspChilli Powder
  • 2dried Apricots, diced
  • 2Green Chillies, slit
  • 2 cupsFried Onions
  • 2 tbspFresh Green Coriander

Steps

40-45 mins
  1. 1

    Heat oil in a deep pan and fry the kathal pieces until they turn golden brown, set aside.

  2. 2

    In another deep pan, heat the ghee, add the cumin seeds, bay leaf, peppercorns, cloves, dried red chillies, powdered fenugreek and fennel seeds, allow them to splutter.

  3. 3

    Add the onion & ginger-garlic paste. Cook on low-medium heat until the rawness disappears and the masala turns golden brown.

  4. 4

    Add the fried Kathal pieces, coat well with the masala.

  5. 5

    Whisk the curd, add to the kathal masala, mix well on low heat. Stir vigorously, blend the masalas well with the kathal pieces.

  6. 6

    Add the diced mangoes, fry on medium heat till the oil seperates.

  7. 7

    Add the salt, the dried apricot & the garam masala, turmeric, coriander & red chilli powders.

  8. 8

    Mix well, add the slit green chillies and fried onions. Cook on medium heat for 5 mins.

  9. 9

    Take off heat. Garnish with chopped fresh coriander.

  10. 10

    Serve hot with rotis / naan / pooris / rice.
