Chawal ke Fare

Presenting one of the #traditional delicacies of #UttarPradesh "Chawal ke Fare".
In the region, to which I basically belong, it is especially prepared on the occasion of Karwa Chauth, a festival to mark a beautiful bond between a husband and wife celebrating love & togetherness!
But these days, only few people prepare it as it's little tedious procedure to make in today's busy lives. #lostrecipes
Fara can be plain, stuffed, sweet or savory. Further stuffing can also vary. It can be customized in a number of ways.
This is the recipe for steamed stuffed savory fara in typical Uttar Pradesh style where
- Coating made with Chawal ka atta which is freshly prepared (though readymade rice flour can also be used) and
- Stuffing done with Urad dal & chana dal in an equal proportion (soaked & coarsely grinded), flavored with green chilies, ginger & garlic.
Along with typical fara shape, my Nani(grandmother) used to make, some in a shape of tiffin box having 4 balls(= 4 rotis) inside it. And as you can see in the photo, I am also continuing as it's fun to make these tiny lunch boxes especially when you have a kid home.
This recipe is for the steamed version. Leftover steamed Fara can be tempered in a little oil with onion, curry leaves, green chillies and mustard seeds etc. for breakfast or anytime snack.

To make the rice flour, soak the rice for 3-4 hrs. Strain & spread it on a cloth or kitchen towel under fan for 2 hrs. (Do not dry in the sun.) Grind to a fine powder.

For stuffing grind chana dal and urad dal along with green chilies, ginger & garlic to a coarse paste.Transfer the paste to a mixing bowl and add salt. Mix and keep aside.

To prepare the dough, heat water in a pan, add ghee and salt to taste. Once the water comes to a boil, switch off the flame. Add rice flour & keep mixing to make a lump free mixture. Cover and leave for 5 minutes. After 5 minutes, mix it with a spatula. Once it cools down a bit, knead for 4-5 minutes until smooth.

Divide into equal portions. Roll into a small chapati using dry rice flour. Put lentil stuffing & fold it.

Meanwhile, prepare the steamer. Place the prepared Fare on a greased plate. Steam for 10-15 minutes each batch. Serve hot with green chutney!
