Rajgira or Amarnath is good source of fibre and protein. It is widely used in fasting days and festivals. This falahari version of nankhatai is easy to make, delicious and mouth melting.

In a mixing bowl take ghee. Beat with hand beater for 1- 2 minutes. Add powdered sugar and beat again for 4-5 minutes or until mixture turns soft and fluffy. Add cardamom powder and beat for few seconds.

Add rajgira flour and dessicated coconut. Combine well. Don't knead just mix well.

Prepare balls from it and slightly flatten with palm. Make cross with knife on the centre. Put into greased baking tray with some distance. Bake at 160°C for 15-20 minutes in preheated oven. You can also make in kadai.

After baking cool down for one hour. Then enjoy delicious rajgira nankhatai. Store in airtight container.
