Shravan is a festive Marathi month. Different types of festivals are celebrated in this month and variety of traditional sweets are prepared. Coconut Rice (Traditional Sweet) is mainly prepared on the full moon day of 'Shravan'. This day is popularly known as Narali Purnima or Rakhi Purnima. Coconut Rice, Coconut Burfi (Vadi) or Coconut Karanji, etc. is prepared by using fresh Coconut and Jaggery. Narali purnima is mainly celebrated by the Fishermen. They worship the Sea and offer whole Coconut to the Sea. Rakhi festival is also celebrated with full enthusiasm all over India. Sister ties a thread called 'Rakhi' on her brother's wrist and pray for his long life and brother promises to protect her throughout the life.
My mom always used to prepare Coconut Rice on Narali Purnima. I have learned this recipe from her and I am sharing the same with you. All ingredients are easily available at home. So let's see the recipe.

Ingredients

30-40 minutes
3-4 persons
  • 1 cupBasmati Rice
  • 1 cupgrated Coconut
  • 1.5 cupchopped Jaggery
  • 1/4 tspSalt
  • 2 tbspGhee
  • 4-5Cloves
  • 2-3Black Cardamom (Badi/Masala Elaichi)
  • 1/4 tspCardamom powder
  • 1/4 cupCashew Nuts
  • Almond slices for garnishing

Steps

30-40 minutes
  1. 1

    Wash the Rice, remove all water and keep it aside. Soak it for 15-20 minutes. In a large vessel keep the water for boiling. Add Salt and washed & soaked Rice in it and cook it. When the Rice is cooked, remove the excess water with the help of a strainer. Keep the cooked Rice in a plate and let it cool down.
    *Rice should be cooked well and all rice grains should be separated. Do not overcook Rice.
    *For preparing Coconut Rice, I always use whole Basmati rice.

    Now heat pure Ghee in a wok or non-stick pan. Add Black Cardamom (Badi elaichi) and Cloves. Now add grated Coconut and Jaggery in it. Mix it well until Jaggery gets dissolved completely. Add Cashew nuts and Cardamom powder in it.
    *You can use Jaggery as per your taste.

    Once the mixture gets boiled, add cooked Rice in it and mix it well. Cover it with a lid on medium heat for 2-3 minutes and remove the lid and stir it well. Add some Ghee in it. Again cover it with lid for 2-3 minute. When mixture gets dry, transfer the cooked Coconut Rice in a serving bowl.

    Garnish the delicious Sweet Coconut Rice with Almond slices before serving.
