This is an excellent innovative try by me this weekend. Actually I was left with lots of Chicken and I wanted to put it to use in a reasonable way. I wanted to make a complete meal out of it and that is why I have done this. The taste was awesome. Everyone liked it. And the highlight was the Schezwan Chutney that I added to this special rice preparation. You can give it a little Indian touch to it by using a few masalas too. That's it. Absolutely yummy and gets done pretty soon. It is a good one to try at many an unexpected parties when you have guests over at home.

Heat Oil in a kadai. Saute Onions with Ginger garlic paste. Add the rest of the vegetables too. Also add the rest of the ingredients mentioned. Saute all on a low heat until nicely done. Do not over cook them.

Do not forget to add the Chicken pieces too. Saute all of that simultaneously. You can use any of the Chicken curry or fried chicken that's leftover at home. I have used fried chicken which I made the previous day.

After 10 minutes of sauteeing, add cooked rice to it. Mix well and cook on a low heat with a lid on. Let it heat for about 5 minutes. Garnish with chopped Coriander Leaves. Serve it piping hot with any of your favourite side dish. Enjoy!
