Take a wok. Heat oil in it. Add mustard seeds and fenugreek. When it becomes brown, add onion, green chilli, ginger and hing. Stir and sauté till onions become translucent.

Add pumpkin pieces, turmeric powder, coriander powder, salt and red chilli powder. Mix it well.

Cover the lid. Cook it on low medium flame for 7-8 minutes or until it becomes softened. If required add 1-2 tsp water.

Turn off the flame. Add amchur powder and coriander leaves.
