Ingredients

  1. 1/2 cuptri colour quinoa
  2. 1/2chopped tomatoes
  3. 1/2chopped capsicum
  4. 1/2chopped onion
  5. 1 tbspgarlic and ginger paste
  6. 3 cupvegetable stock
  7. 1 tspcumin powder
  8. 1 tspblack pepper powder
  9. 1 tspred chilli powder
  10. 1 tsppaprika
  11. to tasteSalt
  12. 2 tbspoil
  13. 1/2 cupmixed beans
  14. 1/2 cuppumpkin purée

Cooking Instructions

    Collect all the ingredients

    Take a pot and heat the oil, add onions sauté and add ginger garlic paste. Sauté well.

    Add tomatoes, capsicum and beans and add pumpkin purée

  4. 4

    Now add all the dry masala

  5. 5

    Add the quinoa

  6. 6

    Mix well and add 3 cup vegetable stock, salt and let it cook for medium heat until it’s properly cooked.

    Garnish with your choice of toppings

    Now your one pot quinoa is ready. A very healthy and delicious full of protein as well as iron and fiber.
