Fried green tomatoes is a classic movie. My husband first introduced me to it. I think his mom had made him watch it when he was younger and now is a nostalgic memory. This is a take on the recipe that I have made into a lunch for myself on numerous occasions. #heirloom

Ingredients

4 serving
  1. 2green tomatoes, sliced into 4 thick slices
  2. 2 C.Cooked shredded chicken
  3. 4 Tbsp.Olive oil
  4. 1 containercream cheese
  5. 2 tsp.Dill, chopped
  6. 2 tsp.Italian seasoning
  7. 2to. Lemon juice
  8. To tasteSalt and pepper
  9. 1 1/2 CupFlour
  10. 3eggs
  11. 1 1/2 CupBread crumbs of your choice

Cooking Instructions

    In a medium bowl combine cream cheese,dill, Italian seasoning, lemon juice, and salt and pepper. Add in cooked shredded chicken and mix well.

    In 3 small separate bowls add flour to one bowl, eggs whisked in a second, and breadcrumbs in a third.

    Add olive oil to a large skillet over medium-high heat.

    While oil is heating assemble sandwiches. Start with 1 slice tomato, spread on cream cheese mixture, and top with another tomato slice.

    Dip tomato sandwich in flour, egg, and lastly breadcrumbs. Fry 3-4 minutes on each side until browned and crispy. Drain on paper towel. Repeat with remaining slices of tomato.
