Ingredients

  • 6 cupspotatoes, diced
  • 5hard boiled eggs, chopped
  • 1 cupcelery, diced
  • 1/2 cupdill pickle, diced
  • 1/4 cupdiced pimento
  • 1 tbspyellow mustard
  • 2/3 cupmayonnaise
  • 6 tbspolive oil
  • 2 tbspwine vinegar
  • 1 1/2 tspsalt
  • 1/2 tspground pepper

Steps

  1. 1

    Cook potatoes and dice into bite sized pieces

  2. 2

    Mix oil, vinegar, mayo, and mustard together in a bowl

  3. 3

    Pour mixture over warm potatoes (allowing mixture to soak in), refrigerate until cool

  4. 4

    Add remaining ingredients and mix well
