Short on time but expecting guests? That’s always my situation! Luckily, I always keep ingredients on hand for moments like these. I checked my fridge, and this is what I came up with today.

Line a round bowl with plastic wrap to shape the dessert.

In another bowl, prepare a soaking syrup by mixing black cherry syrup and water to your preferred sweetness.

Dip the ladyfingers in the syrup and arrange them inside the bowl, radiating from the sides and finishing with the bottom.

Whip the heavy cream, then add the sugar and mascarpone. Set aside a portion of this mixture for the topping.

To the remaining cream mixture, add the softened and dissolved gelatin. Gently fold in the chopped pineapple and grapes, then pour half of this filling into the ladyfinger-lined bowl.

Add another layer of soaked ladyfingers in the center to form a new base, then pour in the rest of the cream mixture, spreading it to the edges. Finish with another layer of soaked ladyfingers on top. Cover and refrigerate for 4 hours, or freeze for 1 hour if you’re short on time.

After chilling, remove the dessert from the bowl, invert it onto a serving plate, cover with the reserved cream, and decorate as you like. Enjoy your beautiful dessert!
